Meat Starter Culture Flora Italia LC is designed for production of dry cured meat delicacies, with the smooth and gentle flavor of Italian salami but with a fast acidification for food safety with additional control against Listeria monocytogenes. The culture is well suited for all fermented sausages with a short production time.
Flora Italia LC is developed for application in up to 100 kg fermented meat products like fast fermented sausages. It drives acidification and supports color and flavor development and promotes a stable color and Mediterranean flavor. The culture has the ability to help control the growth of Listeria monocytogenes.
The combination of the strains gives a very good color formation and a more intensive, but mild aroma development. And the sucrose positive Lactobacillus sakei shows a very good growth potential and is able to suppress the growth of a lot of indigenous bacteria. Despite the very fast pH-drop it gives a very mild Mediterranean flavor like a traditional fermented sausage.
